Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • Whisk together flour, sugar, baking powder, baking soda, salt, and cocoa powder in a bowl.
  • In a separate bowl, whisk together eggs, buttermilk, oil, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Gradually stir in hot water until you have a smooth batter.
  • Divide the batter among the cupcake liners, filling each about two-thirds full.
  • Bake for 18-20 minutes or until a toothpick comes out clean.
  • Allow the cupcakes to cool completely on a wire rack.

Fillings

  • For the strawberry filling, beat heavy cream with powdered sugar and vanilla until stiff peaks form, then fold in pureed strawberries.
  • For the vanilla filling, repeat the process with heavy cream, powdered sugar, and vanilla extract.
  • Cut a small hole in the center of each cooled cupcake to fill.
  • Fill the holes with alternating layers of strawberry and vanilla cream.

Ganache Topping

  • Heat the heavy cream until it simmers, then remove from heat and stir in chocolate chips until smooth.
