Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt, whisking until well blended.
  • Add the softened unsalted butter, whole milk, eggs, and vanilla extract, mixing until the batter is smooth and creamy.
  • Fold in the melted white chocolate gently.
  • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.

Frosting and Assembly

  • While the cakes bake, prepare the frosting by whipping the heavy cream, vanilla extract, and powdered sugar until stiff peaks form.
  • Once cooled, frost the top of one cake layer with the whipped cream and place fresh raspberries on top.
  • Top with the second layer and cover the entire cake with the remaining whipped cream.
