Ingredients
  

For the filling

  • 1 cup Short-grain rice Rinsed and par-cooked
  • 1 large Yellow onion Finely chopped
  • 3 tbsp Fresh dill Finely chopped
  • 2 tbsp Fresh mint Finely chopped
  • 3 tbsp Fresh parsley Finely chopped
  • 2 cloves Garlic Minced
  • 1 tbsp Tomato paste Adds richness
  • ½ lb Ground lamb Or ground beef
  • 1 tbsp Olive oil Additional for meat
  • 2 tbsp Pine nuts Optional but traditional

For flavoring and seasoning

  • 2 tbsp Olive oil Good-quality extra virgin
  • 2 tbsp Lemon juice Fresh-squeezed
  • 1 tsp Lemon zest Freshly grated
  • 1 tsp Sea salt Or to taste
  • ½ tsp Black pepper
  • ¼ tsp Allspice Optional
  • tsp Cinnamon Just a pinch

For the dolmades

  • 40 pieces Grape leaves Fresh or jarred, rinsed well if jarred
  • 1–2 tbsp Extra herbs More dill/parsley for flavor

Instructions
 

Preparation

  • Prep the grape leaves: Start by blanching fresh grape leaves in boiling water for about 2–3 minutes until they’re tender or rinse jarred leaves thoroughly to remove any briny flavor. Set aside a few for lining the pot.
  • Make the filling: In a large bowl, mix together the par-cooked rice, freshly chopped herbs, yellow onion, minced garlic, pine nuts (if using), tomato paste, and spices, including the lemon zest. Add the cooked ground lamb or beef if using.

Rolling and Cooking

  • Roll the dolmades: Take one grape leaf and place it vein-side up. Add about 1 tablespoon of the filling near the stem end, fold the edges over the filling, and roll it snugly.
  • Layer and cook: Line the bottom of a pot with torn grape leaves. Carefully arrange the dolmades seam-side down, weigh them down with a plate, and drizzle with a mixture of lemon juice and olive oil. Cover them and add water to rise slightly above. Simmer covered for 45 minutes.

Serving

  • Rest and serve: Once cooked, let the dolmades sit for 10–15 minutes before serving. Drizzle with extra virgin olive oil.

Notes

For healthier options, consider using quinoa instead of rice, or ground turkey instead of lamb. Serve with Greek yogurt or tzatziki sauce for added freshness.
