  • 4 large baking potatoes For stuffing
  • 1 pound lean ground beef For the filling

  • 1/2 cup sour cream, plus extra for serving For creaminess and flavor
  • 1/4 cup milk To mix with potato pulp

  • 2 green onions, sliced green onions For garnish
  • 1/2 cup salsa For topping

Preparation

  • Preheat your oven to 475°F (245°C).
  • Scrub the potatoes clean, then prick them several times with a fork.
  • Place the potatoes directly on the oven rack and bake for 60 to 75 minutes until soft.
  • While the potatoes are baking, heat a nonstick pan over medium heat.
  • Cook the ground beef and chopped onion until the beef is browned, about 5-7 minutes.
  • Add taco seasoning and 1/4 cup of water, stirring to mix for another minute.

Assembly

  • Once potatoes are baked, let them cool for 10-15 minutes.
  • Slice the top off each potato and scoop out the pulp into a bowl.
  • Mix potato pulp with sour cream and milk until smooth.
  • Stir in 3/4 of the taco meat mixture and 3/4 cup cheddar cheese.
  • Stuff potato skins with the mixture, pack it well.
  • Arrange in a baking dish, sprinkle remaining cheddar cheese on top.
  • Bake at 350°F (175°C) for 20-25 minutes until heated through and cheese is melted.

Serving

  • Serve topped with sliced green onions, salsa, and extra sour cream.

Notes

For the best flavor, consider using high-quality taco seasoning or making your own blend. For extra crispy skins, broil the stuffed potatoes for a few minutes at the end.
