Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until fully combined and smooth.
  • Gradually add the dry ingredient mixture to the wet ingredients and mix until just combined.
  • Stir in the chocolate chips.
  • In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  • Take a tablespoon of cookie dough, flatten it, add 1 teaspoon of cheesecake filling in the center, and cover with another tablespoon of dough.
  • Seal the edges to create a ball.
  • Place the cookie balls onto the prepared baking sheet, spacing them 2 inches apart.

Baking

  • Bake for 10-12 minutes or until cookies are golden around the edges and the centers remain soft.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

Make sure all ingredients are at room temperature for even baking. Add extra chocolate chips on top for enhanced flavor. Mixing in espresso powder can provide depth. Best enjoyed fresh, warm out of the oven.
