Ingredients
  

For the Marinade

  • 2 tbsp ketchup Adds a slightly sweet and rich depth to the marinade.
  • 3 tbsp agave A natural sweetener that pairs perfectly with the other flavors.
  • 4 tbsp rice vinegar Provides a zesty tang that brightens up the dish.
  • 4 tbsp canned pineapple juice The essential ingredient that brings that tropical Hawaiian flavor.
  • 1 tbsp sesame oil Adds a nutty aroma and richness.
  • 2 tbsp avocado oil Used for cooking; it has a high smoke point and a mild flavor.
  • 1 tsp ginger, minced Imparts a warm, spicy note.
  • 4 cloves garlic, minced The fragrant and savory addition.
  • 3 tbsp soy sauce Adds depth, richness, and umami.

For the Chicken

  • 1 lb chicken thighs, boneless and skinless The star of the dish, these chicken thighs provide juicy and tender meat.

Instructions
 

Preparation

  • In a medium-sized bowl or a zip lock bag, combine the ketchup, agave, pineapple juice, rice vinegar, sesame oil, avocado oil, minced ginger, minced garlic, and soy sauce. Mix thoroughly until well combined.
  • Add the chicken thighs to the marinade, ensuring they are all fully coated. Seal the bag or cover the bowl, and place it in the refrigerator to marinate for at least 3 hours, or up to 24 hours for more flavor.

Cooking

  • Preheat a cast-iron skillet over medium-high heat or prepare a grill at medium heat.
  • Once hot, remove the chicken from the marinade and place it in the skillet or on the grill. Cook for 6-8 minutes on each side, or until the chicken is thoroughly cooked and has a nice char.

Serving

  • Serve the grilled chicken with a side of rice, your favorite vegetable, and perhaps a delicious Hawaiian macaroni salad for a complete meal.

Notes

For an extra kick of flavor, add a splash of lime juice or a sprinkle of red pepper flakes to the marinade. Always ensure the chicken is cooked through to an internal temperature of 165°F (75°C). Leftover marinade can be boiled for a dipping sauce.
