Coating Mixture

  • 1 cup all-purpose flour Creates the initial light layer for the crispy coating.
  • 0.33 cup cornstarch Provides extra crunchiness.
  • 0.5 cup fine cornmeal Contributes texture and flavor.
  • 0.75 cup panko breadcrumbs Japanese-style breadcrumbs for unparalleled crunch.
  • 1.5 tsp paprika Infuses mild smokiness.
  • 1 tsp garlic powder Ensures a rich, garlicky flavor.
  • 1 tsp onion powder Balances the garlic flavor.
  • 0.25 tsp cayenne pepper Gives a subtle heat.
  • 0.5 tsp baking powder Helps achieve that airy, crispy coating.
  • 1.25 tsp kosher salt (divided) Essential for seasoning.
  • 0.5 tsp black pepper Adds a hint of spice.

Frying

  • 3 cups vegetable oil Essential for achieving golden-brown finish.

Instructions
 

Preparation

  • Rinse the fresh shrimp under cold water and pat them dry with a paper towel.
  • In a bowl, combine the buttermilk and hot sauce. Add shrimp, coat, and let marinate in the fridge for 15 to 20 minutes.

Coating Preparation

  • In a shallow dish, mix together flour, cornstarch, cornmeal, panko breadcrumbs, paprika, garlic powder, onion powder, cayenne pepper, half of the kosher salt, black pepper, and baking powder.

Cooking

  • Heat the vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
  • Remove marinated shrimp from the fridge, dredge in the coating mixture, shaking off excess.
  • Fry shrimp in small batches for 2 to 3 minutes on each side until golden brown.
  • Remove with a slotted spoon and drain on paper towels.
  • Serve hot with dipping sauce.

Notes

Ensure oil is at right temperature to avoid greasy shrimp. Experiment with spices for added flavor. An air fryer can be used for a healthier version.
