Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C) and prepare your 9-inch springform pan by greasing the sides and lining the bottom with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs with the melted butter, mixing until the crumbs are evenly coated. Press the mixture into the bottom of the prepared springform pan to create a solid base.
  • Bake in the preheated oven for 10 minutes until lightly golden, then let it cool.

Filling

  • In a large mixing bowl, beat the softened cream cheese and granulated sugar using an electric mixer until smooth and creamy.
  • Slowly add in the vanilla extract and eggs, one at a time, beating well after each addition.
  • Stir in the sour cream and heavy cream until everything is just well combined.

Assembly & Baking

  • Pour the cheesecake filling over the cooled graham cracker crust, using a spatula to smooth the top.
  • Bake in the preheated oven for 50-60 minutes, checking for the center to be set but slightly jiggly.

Cooling & Serving

  • Turn off the oven and allow the cheesecake to cool inside for 1 hour.
  • Transfer the cheesecake to the refrigerator, allowing it to chill for at least 4 hours, or ideally overnight.
  • Remove the cheesecake from the springform pan, top with cherry pie filling, scatter fresh cherries, and finish with whipped cream.
  • Slice and serve chilled.

Notes

To elevate your cheesecake, allow your cream cheese to soften at room temperature, use room temperature eggs for a seamless filling, and experiment with flavors by adding almond extract or lemon zest.
