Assembly

  • 1/4 cup cherry jam or preserves Serves as a vibrant layer within the tartlet.

Preparation

  • Preheat the oven to 350°F (175°C) and grease and flour your mini tartlet pans.
  • In a food processor, blend the all-purpose flour and powdered sugar together, then add the cold, cubed butter and pulse until it resembles coarse crumbs.
  • Add the egg yolk and ice water, pulsing until a dough forms. Shape the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and let it rest in the refrigerator for 30 minutes.
  • Roll out the dough on a floured surface and cut out circles that will fit into your tartlet pans. Press the dough into the pans, bake for 10-12 minutes until golden brown, and let them cool.

Filling

  • Pulse the shelled pistachios until finely ground in a food processor. Transfer to a bowl, adding heavy cream, powdered sugar, vanilla extract, and softened butter. Mix until smooth.
  • Spread a layer of cherry jam into the cooled tartlet crusts, then pipe or spoon the pistachio filling on top.

Finishing Touches

  • Top each tartlet with fresh cherries and a sprinkle of crushed pistachios.

Notes

For healthier alternatives, consider using whole wheat flour or coconut sugar. Don’t skip the chilling step to ensure a flaky crust. Store leftovers in an airtight container in the refrigerator for up to 3 days.
