For the Royal Icing

  • 4 cups powdered sugar, sifted Essential for the icing.
  • 3 tablespoons meringue powder Stabilizes the royal icing.
  • 6-8 tablespoons water Adjust for achieving the right icing consistency.
  • to taste none gel food coloring in white, pink, and light blue For decorating.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the egg, vanilla extract, and almond extract if using. Mix until fully incorporated.
  • Gradually add the flour and salt to the butter mixture. Mix just until combined.
  • Divide the dough into two equal portions, wrap each in plastic wrap, and refrigerate for at least 1 hour.

Baking

  • Once chilled, roll the dough out on a lightly floured surface until it reaches about 1/8 inch thickness.
  • Using a dove-shaped cookie cutter, cut out your cookies and transfer them to the prepared baking sheets.
  • Bake for 8-10 minutes, or until the edges begin to turn golden.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Royal Icing Decoration

  • In a large mixing bowl, combine the sifted powdered sugar and meringue powder.
  • Gradually add water, mixing until the icing reaches a thick yet pipeable consistency.
  • Divide the icing into separate bowls and add gel food coloring to create desired hues.
  • Once the cookies are cooled, decorate using the royal icing. Allow to dry completely.

Notes

For even cookie shapes, ensure dough is evenly rolled out. Dust with flour if too sticky. Practice piping on parchment paper before decorating cookies.
