  • 500 g Fresh whole anchovies Fresh hamsi are the best; if unavailable, frozen works too.
  • 1 cup Fine cornmeal For the crispy golden coating.
  • 1/2 cup All-purpose flour Forms the base for the coating.
  • 2 large Eggs Helps the coating stick to the fish.
  • To taste Salt Season the fish lightly before coating.
  • To taste Black pepper Freshly ground for better flavor.
  • 1 whole Lemon For serving, squeeze fresh lemon over the fish.
  • 1 tbsp Paprika For extra flavor in the coating (optional).
  • 1 tsp Garlic powder Adds a savory depth (optional).
  • To taste Fresh parsley For garnish and added freshness.
  • To taste Turkish red pepper flakes For a bit of spice (optional).
  • Enough to cover the fish Sunflower oil For frying the fish.

Instructions
 

Preparation

  • Rinse the anchovies, pat dry, and season with salt.
  • Beat the eggs, mix flour with spices, and set up the cornmeal.

Coating

  • Dip each anchovy in seasoned flour, then into the egg, and finally roll in cornmeal.

Cooking

  • Fry the fish in hot oil until golden and crispy.
  • Drain on paper towels, garnish with parsley, and serve with lemon.

Notes

Avoid overbaking anchovies. Ensure oil is at the right temperature for frying.
