  • 1.25 lb sirloin steak, cut into 1-inch pieces
  • 1.25 lb baby Yukon gold potatoes, halved
  • 2 tbsp olive oil, divided
  • 1.25 tsp kosher salt (plus more to taste)
  • 1 tsp black pepper (freshly ground)
  • 0.75 tsp paprika
  • 0.5 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 0.25 cup low-sodium beef broth
  • 3 tbsp unsalted butter
  • 2.5 tsp garlic, minced
  • 1.5 tsp fresh rosemary, chopped
  • 1.5 tsp fresh thyme, chopped
  • 0.25 tsp crushed red pepper flakes (optional) For added heat
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Season the sirloin steak pieces with kosher salt and freshly ground black pepper, and sear for about 5-7 minutes until golden brown.
  • Remove the steak from the skillet and set aside.

Cooking Potatoes

  • In the same skillet, add the remaining olive oil and halved baby Yukon gold potatoes.
  • Sauté the potatoes for about 10 minutes until they start to soften and turn golden.
  • Season the potatoes with paprika and onion powder, and add crushed red pepper flakes for heat if desired.

Combine Ingredients

  • Add minced garlic, Worcestershire sauce, and low-sodium beef broth to the skillet.
  • Scrape up any brown bits from the bottom of the pan for added flavor.
  • Return the seared steak to the skillet with the potatoes.
  • Incorporate butter, rosemary, and thyme, stirring until well combined.

Finishing Touches

  • Squeeze fresh lemon juice over the skillet and let simmer for another 4-5 minutes.
  • Garnish with freshly chopped parsley before serving.

Notes

For best results, let steak come to room temperature before cooking. Consider marinating for added flavor. Optional: Prepare with colorful vegetables or top with cheese or sour cream.
