Preparation

  • Start by slicing the mushrooms, dicing the onion, and mincing the garlic.

Cooking

  • In a large skillet over medium-high heat, add the butter and olive oil.
  • Toss in the sliced mushrooms and allow them to cook undisturbed initially.
  • Lower the heat and add the diced onion; sauté until soft and translucent.
  • Add the minced garlic and cook for about a minute until fragrant.
  • Sprinkle the all-purpose flour over the mushroom mixture, stirring well.
  • Gradually pour in the vegetable broth while stirring to create a smooth sauce.
  • Stir in the Dijon mustard and soy sauce, allowing to simmer for 5-7 minutes.
  • Reduce heat to low, and gently stir in the sour cream without boiling.
  • Season with salt and black pepper to taste, then garnish with fresh parsley.

Notes

For an extra layer of flavor, sauté the mushrooms until deeply browned. Consider adding a splash of vegetable-based cream or cooked pasta to make it a complete meal. Store leftovers in an airtight container for up to 3 days.
