Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Prepare your baking dish or loaf pan by lining it with parchment paper or lightly greasing it.
  • In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, beaten egg, minced garlic, diced onion, Italian seasoning, salt, pepper, and chopped parsley.
  • With gentle hands, mix the ingredients until well combined; it should hold together when pressed.
  • Transfer the mixture to your prepared baking dish or loaf pan and shape it into a loaf.

Topping and Cooking

  • In a small bowl, mix the topping ingredients: grated Parmesan, breadcrumbs, melted butter, and minced garlic until uniform.
  • Sprinkle the topping evenly over the shaped meatloaf.
  • Slide the baking dish into your preheated oven and bake for 40-45 minutes.
  • Check for an internal temperature of 165°F (74°C) and ensure the topping is golden.

Serving

  • Once done, allow the meatloaf to rest for 5-10 minutes.
  • Slice and serve warm with your favorite sides.

Notes

Avoid overmixing to prevent a dense loaf. Resting the meatloaf after baking is crucial to retain juiciness. Adjust seasoning to taste and consider healthier alternatives or variations as per your preference.
