Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking.

  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add the egg, molasses, and vanilla extract to the buttery mixture, mixing until everything is well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Chill in the fridge for about 30 minutes if the dough is too soft.
  • Roll out the dough onto a lightly floured surface to about 1/4-inch thickness.
  • Use cookie cutters to cut out shapes and place them on the prepared baking sheets.

Baking

  • Bake your cookies for 8-10 minutes, or until the edges are slightly browned.
  • Let the cookies cool completely on a wire rack.

Decorating

  • While the cookies are cooling, prepare the royal icing. Beat the egg whites until stiff peaks form.
  • Gradually add powdered sugar and lemon juice, beating until smooth and glossy.
