Ingredients
  

For the chicken

  • 2 lbs organic chicken (drumsticks, wings, and thigh pieces)
  • 2 tsps sea salt, divided
  • 2 tsps black pepper, divided
  • 2 tsps smoked paprika, divided
  • 2 tsps garlic powder, divided
  • 2 tsps dried thyme, divided
  • 2 tsps dried parsley, divided
  • 2 tsps dried basil, divided
  • 1/2 cup organic all-purpose flour
  • 2 cups breadcrumbs
  • 2 cups cornflakes, crushed
  • 2 large eggs
  • 1 cup almond milk, unsweetened
  • 2 Tbsps hot honey
  • 6 Tbsps unsalted butter

For the sauce

  • 1/2 cup hot honey
  • 2 tsps cayenne pepper
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika (for sauce)
  • 1/2 tsp garlic powder (for sauce)
  • pinch sea salt (for sauce)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper and place a wire rack on top.
  • In a large bowl, combine the cleaned chicken pieces with hot honey and seasonings: 1 tsp each of sea salt, black pepper, smoked paprika, garlic powder, thyme, parsley, and basil. Mix well and let sit for 5-10 minutes.
  • Pat the chicken dry with paper towels and coat each piece in flour, shaking off excess.
  • In a separate bowl, blend crushed cornflakes, breadcrumbs, and remaining spices.
  • In another bowl, whisk together the eggs and almond milk.

Baking

  • Dip each flour-coated chicken piece into the egg-milk mixture, then roll it in the breadcrumb blend.
  • Arrange the chicken on the prepared baking sheet. Bake for 30-35 minutes or until cooked through with a golden crust.

Making the Sauce

  • While the chicken is baking, melt butter in a skillet over medium-high heat. Add remaining sauce ingredients and stir until smooth to create the honey glaze.
  • Once the chicken is baked, spoon the sauce over each piece just before serving.

Notes

For a milder version, adjust the amount of cayenne pepper and chili powder. Marinate the chicken overnight in the hot honey mix for deeper flavor. Experiment with different breadcrumbs like panko.
