Cream Cheese Filling

  • 8 ounces cream cheese, softened for a creamy, cheesecake-like filling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  • In a large mixing bowl, combine the creamy peanut butter, softened unsalted butter, granulated sugar, and brown sugar. Beat until light and fluffy.
  • Crack in the egg and add the teaspoon of vanilla extract. Beat until fully incorporated and smooth.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
  • Fold in the chopped mini Reese's cups.
  • In another bowl, whip the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Roll the cookie dough into 1-inch balls and place on the baking sheet. Create a well with your thumb in each ball.
  • Spoon about 1/2 teaspoon of cream cheese filling into each indent.

Baking

  • Bake for 10-12 minutes, until edges are golden brown and centers are soft.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

To elevate your cookie baking experience, ensure butter is at room temperature. For extra chocolatey flavor, add more Reese's or drizzle melted chocolate on top. Store in an airtight container for freshness.
