Ingredients
  

For the Toast

  • 4 slices slices of rustic bread Sourdough or French bread works best.

For the Mushroom Mixture

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cups cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves or use ½ teaspoon if dried.
  • ½ cup grated Parmesan
  • 1 cup shredded mozzarella
  • ¼ cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the butter and olive oil over medium heat.
  • Add the sliced mushrooms and cook until they soften and turn golden brown, about 5-7 minutes.
  • Stir in the minced garlic and thyme, cooking for an additional 1-2 minutes. Season with salt and pepper.
  • Add the heavy cream and cook for another 2 minutes until the sauce thickens slightly.
  • Toast the slices of rustic bread in the oven or on a grill pan until golden brown, about 5-7 minutes.
  • Spoon the mushroom and garlic mixture onto each piece of toasted bread.
  • Sprinkle with Parmesan cheese and shredded mozzarella.
  • Place the toasts back in the oven for 5-7 minutes, or until the cheese melts and bubbles.
  • Remove from the oven, garnish with fresh parsley, and serve immediately.

Notes

This recipe is adaptable; for a lighter version, substitute heavy cream with a low-fat alternative or Greek yogurt. Keep an eye on the mushrooms to avoid burning.
