For the Meatballs

  • 1 pound lean ground beef
  • 1/2 cup panko breadcrumbs for added crunch

  • 1 teaspoon Dijon mustard adds tang
  • 1/2 teaspoon onion powder for depth of flavor

For the Gravy

  • 8 ounces mushrooms thinly sliced, preferably cremini
  • 3 tablespoons butter divided for richness
  • 2 tablespoons all-purpose flour for thickening
  • 2 cups beef broth hearty foundation
  • 1 tablespoon tomato paste to deepen color and flavor
  • 2 teaspoons Worcestershire sauce adds umami complexity

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Prepare a large baking sheet by lining it with parchment paper or foil.
  • In a large mixing bowl, combine the lean ground beef, panko breadcrumbs, egg, steak sauce, ketchup, Dijon mustard, onion powder, garlic powder, and 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix until all ingredients are thoroughly combined.
  • Shape the mixture into 16 to 20 meatballs and arrange them on the prepared baking sheet. Bake for 16 to 20 minutes, or until cooked through (internal temperature should reach 160°F/71°C).

Cooking

  • While the meatballs are baking, melt 1 tablespoon of butter in a large skillet over medium-high heat. Add the sliced mushrooms and sauté for about 3 to 5 minutes, or until they become soft and release their juices.
  • Transfer the cooked mushrooms to a plate, keeping the pan juices.
  • In the same skillet, melt the remaining butter over medium heat. Whisk in the flour until smooth, then gradually whisk in the beef broth, tomato paste, and Worcestershire sauce. Bring the mixture to a simmer, cooking until thickened for about 3 to 5 minutes.
  • Return the sautéed mushrooms to the skillet, then add the baked meatballs into the rich gravy, cooking briefly to heat everything through.

Serving

  • Serve the meatballs garnished with freshly chopped parsley, if desired.

Notes

To enhance flavor, allow the shaped meatballs to rest before baking. Consider adding grated Parmesan cheese for added moisture. For a spicier version, add cayenne pepper. Adjust gravy seasoning to taste.
