Ingredients
  

Marinade

  • 1 whole Juice and zest of 1 lemon Use fresh lemon for best flavor.
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic cloves, finely minced Or 1 tsp dried garlic powder.
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp coarse black pepper

Chicken and Toppings

  • 1 pound thin-sliced chicken breast
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh chopped parsley
  • additional pieces lemon wedges for serving

Instructions
 

Preparation

  • In a large mixing bowl, combine the lemon zest, lemon juice, olive oil, garlic, oregano, smoked paprika, sea salt, and black pepper. Whisk together until well combined and emulsified. Reserve 1/4 cup of the marinade for later use.
  • Add the thin-sliced chicken to the bowl with the remaining marinade, using tongs to ensure each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Cooking

  • Heat a nonstick skillet over medium-high heat. Once hot, add a drizzle of olive oil to the pan.
  • Place the marinated chicken in the skillet. Sear until the bottom turns golden brown, about 3-4 minutes. Flip the chicken and continue cooking for an additional 3-4 minutes, or until cooked through, white in the middle, and juices run clear.
  • Transfer the cooked chicken to a serving plate. Drizzle with the reserved marinade and sprinkle with freshly chopped parsley and crumbled feta cheese.

Serving

  • Serve with additional lemon wedges on the side.

Notes

For deeper flavor, consider marinating the chicken overnight. Serve with fresh Greek salad or pita bread for a complete meal.
