  • 2 tablespoons unsalted butter, softened Enhances richness

  • 1 cup mushrooms, sliced Brings earthy tones
  • 1 small onion, thinly sliced For added sweetness
  • 1 tablespoon olive oil To coat vegetables
  • to taste salt and pepper For seasoning
  • 1 teaspoon fresh thyme leaves Optional, for a pop of freshness

Instructions
 

Roasting Vegetables

  • Preheat your oven to 375°F (190°C).
  • In a bowl, toss sliced mushrooms and onions with olive oil, salt, and pepper until coated.
  • Spread the vegetables evenly on a baking sheet and roast for 15-20 minutes until golden and tender.

Grilling the Sandwich

  • Heat a skillet over medium heat.
  • Butter one side of each slice of bread.
  • Place one slice in the skillet, buttered side down, and sprinkle a generous amount of shredded Gouda on top.
  • Once the vegetables are roasted, layer them on top of the cheese.
  • Add the second slice of bread on top, buttered side up, and grill for 3-4 minutes on each side, pressing down gently until golden brown.
  • Remove from skillet, slice in half, and serve warm.

Notes

For the perfect grilled cheese, ensure butter is softened but not melted for even browning. Experiment with different cheeses and add garlic powder to butter for enhanced flavors. Store leftovers in an airtight container for up to three days.
