Ingredients
  

For the Grilled Salmon

  • 24 ounces 4-6 ounce salmon filets
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon maple syrup or brown sugar
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (about 1 lime)
  • 2 cloves crushed garlic (or 1 teaspoon garlic powder)
  • 1/2 teaspoon kosher salt
  • 2 teaspoons Tajin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder

For the Mango Salsa

  • 1 large ripe avocado, diced
  • 1 large mango, diced
  • 1/2 medium red bell pepper, diced small
  • 2 tablespoons finely chopped cilantro
  • 1/2 medium jalapeño, seeded and minced
  • 1/4 cup finely diced red onion
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1/2 teaspoon kosher salt, plus more to taste

Instructions
 

Preparation

  • In a large bowl, whisk together the soy sauce (or coconut aminos), olive oil, maple syrup (or brown sugar), lime juice, garlic, and spices until well combined.
  • Marinate the salmon in the sauce for at least 20 minutes; for more intense flavor, you can let it sit in the fridge overnight.
  • Prepare the mango salsa by combining the diced avocado, mango, red bell pepper, cilantro, jalapeño, and red onion in another bowl.
  • Drizzle the salsa mixture with fresh lime juice and sprinkle with kosher salt, then toss gently to combine all the ingredients.

Cooking

  • Preheat your grill to medium-high, aiming for a temperature of 400-450°F.
  • Brush the grill grates with a little oil to prevent sticking.
  • Place the salmon skin-side down on the hot grill and cook for about 4-5 minutes.
  • Flip once, continuing to grill until the internal temperature reaches 135-140°F.
  • Once done, remove the salmon from the grill and let it rest for a few minutes.
  • Serve each piece topped with a generous scoop of mango salsa.

Notes

For enhanced flavor, add fresh herbs like dill or parsley to the marinade. Monitor the salmon closely while grilling to prevent overcooking.
