Ingredients
  

For the Mashed Potatoes

  • 2 pounds russet or Yukon gold potatoes, peeled and cut into 1-inch pieces

  • 1/2 teaspoon salt (adjust to taste)
  • 3 tablespoons butter
  • 1/2 cup whole milk
  • Garlic powder, salt, and black pepper to taste

For the Ground Beef and Gravy

  • 1 pound ground beef
  • 2 cups beef broth, divided
  • 1 small onion, chopped
  • 2 tablespoons cornstarch

Instructions
 

Preparing the Mashed Potatoes

  • Fill a medium pot with water, adding salt, and bring it to a boil over medium-high heat.
  • Add the cut potatoes and boil for about 7 to 8 minutes, or until they can be easily pierced with a fork.
  • While the potatoes are boiling, heat the butter and milk in a small saucepan over medium heat, whisking occasionally until the butter is completely melted.
  • Drain the potatoes and return them to the pot on an unused burner to dry out.
  • Mash the potatoes to your desired consistency, then gradually stir in the butter-milk mixture, ensuring all liquid incorporates evenly.
  • Season with garlic powder, salt, and black pepper, stirring well, then set aside.

Cooking the Ground Beef and Gravy

  • In a small bowl, mix the cornstarch with 1/4 cup of beef broth until it’s smooth and set aside.
  • Heat a large skillet over medium heat, then add the ground beef and cook until it’s no longer pink. Drain any excess liquid.
  • Add the remaining 1 1/2 cups of beef broth, chopped onion, garlic powder, salt, and black pepper to the skillet.
  • Let it simmer for 5 to 10 minutes until the onion is tender.
  • Gradually whisk in the cornstarch mixture, bring to a boil, and cook for 2 more minutes until the gravy thickens.

Serving

  • Divide the mashed potatoes among serving bowls.
  • Top each bowl with a generous portion of the ground beef and gravy.
  • Serve warm, with additional gravy on the side if desired.

Notes

Consider adding a splash of Worcestershire sauce or a teaspoon of mustard to the beef mixture for an extra kick. For creamier mashed potatoes, increase butter and milk. Add crushed red pepper flakes for heat and garnish with fresh herbs for color.
