Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, beat the softened butter and powdered sugar together until light and fluffy.
  • Add the vanilla extract and egg, mixing until smooth.

Dough Assembly

  • Gradually mix in the dry ingredients until just combined.
  • Turn the dough out onto a lightly floured surface and roll it to about 1/4 inch thickness.
  • Use a heart-shaped cookie cutter to cut out cookies.

Baking

  • Place half of the cookies on the baking sheet, and add a small amount of raspberry jam to the center of each.
  • Top with the remaining cookies, gently pressing down to seal the jam inside.

Notes
