Ingredients
  

Vegetables

  • 2 tablespoons butter
  • 2 sticks celery, chopped
  • 1 medium carrot, chopped
  • 1/4 cup green onion, chopped (more for garnish)
  • 2 cloves garlic, finely chopped

Base ingredients

  • 1/3 cup flour
  • 2 tablespoons flour
  • 1 cup heavy whipping cream
  • 5-6 cups homemade shrimp stock

Main ingredients

  • 2 lbs raw jumbo shrimp, peeled, deveined, and chopped
  • 4 slices rustic or French bread, cubed and toasted
  • to taste Salt & pepper

Preparation

  • Begin by melting the butter in a large pot over medium heat.
  • Once the butter has melted, add the chopped celery, carrot, and green onion. Sauté these vegetables for about 5 minutes.
  • Add the finely chopped garlic and stir for an additional minute.
  • Sprinkle in the flour, stirring continuously for another minute.
  • Gradually add the heavy whipping cream while stirring to avoid lumps.
  • Pour in the homemade shrimp stock, stirring well and letting it cook until it thickens, roughly 10 minutes.
  • Add the raw chopped shrimp and bring the bisque to a gentle boil.
  • Reduce the heat and let it simmer for about 10 minutes.
  • Season with salt and pepper to taste, then serve hot, garnished with toasted croutons and additional chopped green onions.

Notes

For enhanced flavor, add lemon juice or paprika. Substitute half-and-half for some cream for creaminess. Add more shrimp stock if the bisque is too thick.
