Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan, lining the bottom with parchment paper.
  • In a small bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of the prepared pan to form the crust.
  • Bake the crust for 10 minutes, then set aside to cool.

Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add melted white chocolate chips, pistachio paste, sour cream, and sugar, beating until fully incorporated.
  • Add eggs one at a time, beating well after each addition, then stir in vanilla extract.

Baking and Chilling

  • Bake for 45-50 minutes until the edges are set but the center jiggles.
