For the Frosting

  • 1 cup heavy cream Adds fluffiness to the frosting.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 5 minutes.
  • Add eggs one at a time, beating well after each addition.
  • Stir in vanilla extract, followed by crushed pineapple and milk.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in melted white chocolate chips.

Baking

  • Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick comes out clean.
  • Allow cakes to cool in pans for 10 minutes before transferring to a wire rack to cool completely.

Frosting

  • Beat cream cheese and powdered sugar together until smooth.
  • Add heavy cream and vanilla extract, beating until thick and fluffy.
  • Fold in melted white chocolate chips.

Assembly

  • Once cakes are completely cool, frost the top of one layer and stack the second layer on top.
  • Frost the entire cake and garnish as desired with white chocolate shavings or pineapple slices.

Notes

Make sure your butter is softened to room temperature for easier creaming with sugar. Drain the crushed pineapple thoroughly to avoid a wet cake. Use high-quality white chocolate for best results. Allow cakes to cool completely before frosting to prevent melting.
