  • 8 pieces medium-sized lamb chops
  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • 1 tablespoon dried oregano
  • 1/2 teaspoon onion powder
  • 2 teaspoons dried thyme
  • 1/2 tablespoon smoked paprika
  • 3-4 cloves garlic
  • 1/2 pieces red bell pepper
  • 1/4 cup olive oil
  • Juice from 1/2 lemon
  • Fresh parsley for garnish

Preparation

  • Process or blend the red bell pepper, fresh parsley, and garlic into a coarse mixture and transfer to a spacious mixing bowl.
  • Divide the lamb rack into 8 chops on a chopping board, ensuring they are tender and ready for flavor.
  • In the mixing bowl, combine the lamb chops with the bell pepper mixture and all remaining ingredients, using your hands to ensure each chop is evenly coated.
  • Cover the bowl with a cloth or plastic wrap and let it marinate in the refrigerator for 1 hour.
  • Remove the lamb from the refrigerator about 20 minutes before cooking to allow it to reach room temperature.

Cooking

  • Preheat your oven to 400°F (200°C).
  • Heat about 2 tablespoons of olive oil in a cast iron skillet over medium heat until hot and shimmering.
  • Sear each lamb chop in the skillet for 1-2 minutes on each side until they achieve a golden-brown crust.
  • Transfer the lamb chops back to the skillet, ensuring they don’t overlap.
  • Bake in the preheated oven for 2-5 minutes for medium-rare to medium, or 5-10 minutes for medium-well to well-done lamb.
  • If the skillet can’t fit all the chops, repeat the baking process with the remaining lamb.
  • Serve the Herbaceous Lamb Chops on a beautiful plate, garnished with fresh parsley.

Notes

Use fresh herbs whenever possible for the best flavor. Allow lamb chops to rest for a few minutes after cooking to let juices redistribute.
