Preparation

  • In a mixing bowl, blend the cold, cubed butter with flour until the mixture resembles coarse crumbs.
  • Gradually sprinkle in ice water, mixing until the dough clumps together. Shape it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Rolling and Baking the Crust

  • On a floured surface, roll out the dough until it’s about 1/8 inch thick.
  • Gently place the rolled-out dough into a 9-inch pie pan, pressing it against the edges, and trim any excess for a clean finish.
  • Preheat your oven and blind bake the crust until golden, approximately 15 minutes.

Making the Filling

  • In a separate bowl, whisk the room-temperature eggs until frothy.
  • Slowly whisk in the warm honey and heavy cream until you achieve a smooth custard.

Combining and Baking

  • Pour the honey-cream mixture into the pre-baked crust and slide it back into the oven for about 30–35 minutes, until the edges are set and the center retains a gentle jiggle.

Final Steps

  • Remove from the oven and let the pie cool completely at room temperature before chilling in the fridge for two hours.
