Ingredients
  

For the crust

  • 8 sheets phyllo dough Crispy and delicate layers.
  • 1/2 cup melted butter Brush generously between layers.

For the filling

  • 3 blocks cream cheese, softened (8 oz each) The heart of the cheesecake.
  • 3/4 cup granulated sugar Sweeten the filling.
  • 3 pieces eggs Provides structure.
  • 1 tsp vanilla extract Enhances flavor.
  • 1/4 cup honey For sweetness in the filling.
  • 1/2 cup sour cream Adds creaminess.

For the layers and garnish

  • 1 1/2 cups finely chopped pistachios Nutty and crunchy.
  • 1 tsp cinnamon Warm spice that complements pistachios.
  • 1/4 cup granulated sugar Sweetens the nut mixture.
  • 1/3 cup honey, warmed Drizzled on top for serving.
  • 1/2 cup chopped pistachios For garnish.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C) and grease a springform pan.
  • Layer 4 phyllo sheets in the bottom of the prepared pan, brushing each with melted butter.
  • In a bowl, mix together 1 1/2 cups chopped pistachios, 1 tsp cinnamon, and 1/4 cup granulated sugar.
  • Sprinkle half of this mixture over the phyllo layers.
  • Add another 4 phyllo sheets on top, brushing each with melted butter, and sprinkle remaining nut mixture.

Filling

  • In a separate bowl, beat cream cheese with 3/4 cup sugar until smooth.
  • Incorporate eggs one at a time, adding vanilla, honey, and sour cream. Blend well.
  • Pour the cream cheese filling over the baklava crust and spread evenly.

Baking

  • Bake for 55–65 minutes until the center is set and not jiggly.
  • Allow to cool completely before refrigerating for 4 hours.

Serving

  • Drizzle warm honey over the cheesecake and garnish with chopped pistachios before serving.

Notes

Cover unused phyllo sheets with a damp towel to prevent drying. Toast chopped pistachios for extra flavor. Consider adding zest or a pinch of nutmeg for enhanced flavor.
