Preparation

  • In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, flour, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  • Fold in the chopped parsley and ensure it’s evenly distributed throughout the mixture.
  • Using your hands, gently form the mixture into small balls or puffs, about 1-inch in size.
  • Roll each puff in breadcrumbs until they are evenly coated.

Frying

  • Heat oil in a deep frying pan over medium heat. Make sure there’s enough oil for the puffs to float.
  • Fry the puffs in batches, cooking for 3-4 minutes or until golden brown and crispy.
  • Once fried, remove the puffs from the oil and drain them on paper towels.
