Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a small mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined.
  • Press the mixture into the bottom of mini cupcake liners or silicone molds.
  • Bake for 8-10 minutes until golden. Set aside to cool completely.

Filling

  • In a separate bowl, beat cream cheese and powdered sugar until smooth.
  • Add vanilla extract and mix thoroughly.
  • In another bowl, whip chilled heavy cream until stiff peaks form.
  • Gently fold whipped cream into cream cheese mixture. Stir in finely chopped strawberries.

Assembly

  • Spoon or pipe the cheesecake filling onto the cooled crusts.
  • Garnish with mini chocolate chips and sliced strawberries.
  • Refrigerate for at least 2 hours before serving.
