Preparation

  • Preheat your oven to 400°F (200°C). Prepare a baking tray by lining it with parchment paper or greasing a cast iron skillet.
  • In a mixing bowl, combine the all-purpose flour and very cold cubed butter. Using a pastry cutter or fork, blend them until the mixture resembles coarse crumbs.
  • Add salt, baking powder, sugar, garlic powder, and the finely chopped jalapeños to the bowl. Gently mix with a spatula to evenly distribute the dry ingredients.
  • Sprinkle in the shredded cheddar cheese and stir until combined. The dough should appear crumbly but cohesive when pressed together.
  • Transfer the dough to a well-floured surface. Pat the dough into a rectangle, then fold it several times before rolling it out to a thickness of 1/2 to 3/4 inch.
  • Cut the dough into 2 to 3-inch biscuits using a biscuit cutter. If there are scraps, you can re-roll them to cut additional biscuits.
  • Place the biscuits on the prepared baking tray. Optionally, top each biscuit with a slice of jalapeño.
  • Freeze the tray of biscuits for about 10 to 15 minutes.
  • Brush the tops of the chilled biscuits with the reserved tablespoon of buttermilk, then bake for 20 to 23 minutes or until golden brown.
  • Once baked, remove from the oven and brush the tops with melted butter. Serve warm and enjoy!

Notes

Consider adding chopped green onions or herbs for extra flavor. Keep the butter very cold for a flaky texture. Adjust jalapeño amount for preferred heat level. Experiment with different cheeses.
