Preparation

  • Carefully separate the egg whites from the yolks, keeping yolks in one bowl.
  • Using a sturdy mixer, beat the egg whites and cornstarch until stiff peaks form.
  • In a separate bowl, mix egg yolks with flour, milk, and vanilla extract to form a thick batter.
  • Gently fold the whipped egg whites into the yolk mixture to blend.
  • Grease pancake rings with butter and fill them with the batter.
  • Steam-cook on very low heat until pancakes rise and tops look set.
  • Carefully remove the molds and serve warm with desired toppings.

Notes

For healthier options, use stevia or maple syrup to reduce sugar and almond or oat milk for a dairy-free alternative.
