Preparation

  • Preheat your oven to 450°F (230°C).
  • Pat the beef tenderloin dry with paper towels.
  • Rub the entire roast with olive oil, then season generously with kosher salt and black pepper.
  • In a small bowl, combine minced garlic, chopped rosemary, and thyme.
  • Rub the herb mixture all over the beef tenderloin.
  • Heat a large, oven-safe skillet over medium-high heat and sear the beef tenderloin on all sides for 3-4 minutes each.
  • Remove the skillet from heat and brush the tenderloin generously with Dijon mustard.

Cooking

  • Transfer the skillet to the preheated oven and roast for 25-30 minutes until the internal temperature reaches 130°F (54°C).
  • Once done roasting, remove the tenderloin from the oven and cover it loosely with foil. Let it rest for 10-15 minutes.
  • While the beef is resting, melt the butter in the same skillet over medium heat. If desired, add the heavy cream and let it simmer for 2-3 minutes.
  • Slice the beef into 1-inch thick pieces and drizzle with the buttery sauce before serving.

Notes

Consider marinating the tenderloin overnight with your herb mixture for deeper flavor. Letting the meat rest is crucial for tenderness.
