  • 4 pieces boneless sole filets A delicate protein that cooks quickly.

  • 8 tablespoons butter, divided Adding richness to the sauce.

  • 1/2 cup fresh chopped parsley, divided Adding a pop of color.
  • 2 tablespoons capers Introducing a briny depth.

Instructions
 

Preparation

  • Season the sole filets generously with salt and pepper on both sides.
  • Lightly dredge each filet in flour, pressing gently to ensure both sides are coated evenly.

Cooking

  • In a large skillet, heat 4 tablespoons of butter over medium-high heat until foamy.
  • Gently lay the coated sole filets in the skillet and cook for about 2 minutes on one side.
  • Carefully flip the filets and cook for an additional 2 minutes until golden and cooked through.
  • Transfer the filets to a serving plate and cover with foil to keep warm.

Sauce Preparation

  • In the same skillet, add the remaining 4 tablespoons of butter along with the freshly squeezed lemon juice and half of the chopped parsley.
  • Whisk until the butter is melted and the sauce is well combined.

Serving

  • Plate the sole filets, drizzling with the lemon-caper sauce, and sprinkle with remaining parsley and capers.
  • Finish with lemon slices for garnish.

Notes

For the best flavor, use freshly squeezed lemon juice. You can enhance the sauce with infused garlic butter or substitute sole with flounder or tilapia. Additionally, cooking times may vary based on the thickness of your filets.
