  • Cook the orzo according to package instructions, then drain and set aside.

  • Introduce the mixed vegetables to the skillet, cooking for another 3 to 4 minutes until bright and crisp.
  • Combine the cooked orzo with the chicken and vegetables, then pour in the lemon juice and mix well.

Notes

Consider adding red pepper flakes for heat. Experiment with vegetable choices and use pre-cooked chicken to save time. Don’t overcook the vegetables to maintain their crunch. Adjust seasoning to taste.
