Ingredients

  • 1.5 cups graham cracker crumbs
  • 0.5 cups finely chopped pistachios
  • 0.25 cups melted butter
  • 2 tablespoons sugar

  • 0.75 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon lime zest
  • 0.25 cups fresh lemon juice
  • 0.25 cups fresh lime juice
  • 1 teaspoon vanilla extract

For the Cherry Topping

  • 1 cups fresh cherries, pitted and halved
  • 0.25 cups sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 0.25 cups chopped pistachios (for garnish)

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, mix the graham cracker crumbs with finely chopped pistachios, melted butter, and sugar until evenly combined.
  • Firmly press this mixture into the bottom of a springform pan to form a crust and bake for 10-12 minutes until golden. Let cool completely.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Incorporate the sugar, lemon zest, lime zest, lemon juice, lime juice, and vanilla extract and mix until well combined.
  • Add the eggs one by one, ensuring the mixture is blended well after each addition.
  • Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula.

Baking and Cooling

  • Bake in the preheated oven for 50-60 minutes, until the center is set but still slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about an hour before refrigerating for at least 4 hours.

Cherry Topping

  • Prepare the topping by combining cherries, sugar, lemon juice, and lime juice in a saucepan.
  • Cook over medium heat for about 5-7 minutes, stirring gently until the cherries soften and the mixture thickens slightly.
  • Allow to cool before using.

Serving

  • Once the cheesecake is fully chilled, spread the cherry topping uniformly over the top and sprinkle with chopped pistachios.
