Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and prepare a 9-inch springform pan by greasing it and lining it with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom of the pan.
  • Bake for 10 minutes, then let it cool completely.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth.
  • Add in the vanilla extract, lime juice, and lime zest. Mix well.
  • Incorporate the eggs one at a time, beating well after each addition.
  • Pour the cheesecake batter into the prepared crust and bake for 45-50 minutes.
  • Let the cheesecake cool inside the oven with the door ajar for one hour.
  • Cool completely at room temperature before refrigerating for at least 4 hours or overnight.

Lime Mousse

  • Whip the heavy whipping cream and powdered sugar in a chilled bowl until stiff peaks form.
  • Gently fold in the fresh lime juice and lime zest.
  • Spread the lime mousse over the chilled cheesecake.

Lime Glaze

  • Mix the fresh lime juice and powdered sugar until smooth.
  • Drizzle the glaze over the mousse.
