Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line your cake pans with parchment paper.
  • In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In a separate bowl, beat together the softened unsalted butter and sugar until fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla, lime juice, and lime zest.
  • Gradually alternate adding the flour mixture and buttermilk to the wet ingredients, mixing gently until smooth.

Baking

  • Divide the batter evenly into prepared pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Let the cakes cool completely on a wire rack.

Filling Preparation

  • In a saucepan, whisk together the sweetened condensed milk, lime juice, lime zest, and egg yolks. Cook over medium heat, stirring, until thickened. Cool.

Frosting Preparation

  • Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.

Assembly

  • Spread lime pie filling between each cake layer. Frost the outer layers with whipped cream and garnish with lime zest.

Notes

Store the cake in an airtight container in the refrigerator for up to 3-4 days. It can be frozen unassembled for up to three months.
