  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk At room temperature.
  • 4 ounces white chocolate, melted and cooled
  • 1 cup fresh blueberries Be gentle when folding in.

For the Frosting

  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 3 cups powdered sugar
  • 4 ounces white chocolate, melted and cooled
  • 1-2 tablespoons heavy cream Adjust for desired consistency.
  • Fresh blueberries for garnish Fresh blueberries

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, ensuring each is well incorporated before adding the next, then mix in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients, alternating with the milk, mixing gently until just combined.
  • Stir in the melted white chocolate until smooth, then gently fold in the fresh blueberries.
  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Baking

  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
  • Let the cupcakes cool completely in the tin before transferring them to a wire rack.

Frosting

  • In a bowl, beat the softened butter until creamy, then gradually add the powdered sugar and melted white chocolate.
  • If the mixture is too thick, adjust it with heavy cream to achieve the desired consistency.
  • Once the cupcakes are completely cool, pipe the frosting onto each cupcake, finishing with fresh blueberries.

Notes

Ensure butter and eggs are at room temperature for the best results. Store cupcakes in an airtight container at room temperature for up to three days. Optional: Add lemon zest to the batter or frosting for extra flavor.
