Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a small bowl, mix together the graham cracker crumbs, sugar, melted butter, and chopped pistachios.
  • Press this mixture firmly into the bottom of the prepared springform pan to form an even crust.
  • Bake in the oven for 10-12 minutes until slightly golden, then set the crust aside to cool.

Filling Preparation

  • In a large mixing bowl, beat the softened cream cheese and sour cream together until smooth and creamy.
  • Gradually add the sugar and continue to beat until well combined.
  • Add the eggs one at a time, mixing thoroughly each time.
  • Stir in the fresh lemon juice, lime juice, lemon zest, lime zest, and vanilla extract.
  • Gently swirl in the cherry puree to create a marbled effect.

Baking

  • Pour the cheesecake batter over the cooled crust and smooth the surface.
  • Bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
  • Transfer the cheesecake to the refrigerator and chill for at least 4 hours or preferably overnight.

Cherry Topping

  • In a small saucepan, combine fresh cherries and cherry preserves over low heat.
