Topping Ingredients

  • 1 tbsp lemon juice

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a food processor, pulse the crushed pistachios, sugar, and melted butter until well combined.
  • Press the pistachio mixture into the bottom of a 9-inch springform pan, forming an even crust.
  • Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.

Cheesecake Filling

  • In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  • Add the sour cream, lemon juice, lime juice, and vanilla extract to the cream cheese mixture, mixing until well combined.
  • Add the eggs one at a time, beating well after each addition.
  • Pour the cheesecake filling into the cooled pistachio crust, smoothing the top with a spatula.
  • Bake for 50-60 minutes, or until the edges are set but the middle still jiggles slightly.
  • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  • Refrigerate the cheesecake for at least 4 hours or overnight.

Topping

  • In a small saucepan, combine the cherries, lemon juice, lime juice, and honey. Cook over medium heat for 5-7 minutes.
  • Let the cherry mixture cool to room temperature.
  • Once the cheesecake is chilled, pour the cherry topping over the cheesecake and sprinkle with chopped pistachios.
  • Slice and serve chilled.

Notes

Ensure that your cream cheese is softened properly; leave it out for at least an hour. Feel free to experiment with different nut crusts. If using frozen cherries, thaw and drain them before using. Serve with a dollop of whipped cream and mint for an elegant touch.
