Cherry Topping Ingredients

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and finely chopped pistachios until well mixed. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake in the preheated oven for 10 minutes, then let it cool.
  • In a large mixing bowl, beat the cream cheese, sour cream, and sugar until smooth and creamy. Add the eggs one at a time, ensuring to mix well after each addition. Incorporate the vanilla extract, lemon juice, lime juice, lemon zest, and lime zest until combined.

Baking

  • Carefully pour the cheesecake batter over the prepared crust and utilize a spatula to smooth the top. Bake in the preheated oven for 55-60 minutes, until the edges are set but the center still jiggles slightly.

Cooling

  • Turn off the oven and leave the cheesecake to cool inside with the door slightly ajar for 1 hour. Afterward, refrigerate for at least 4 hours or overnight to firm up.

Cherry Topping

  • In a saucepan over medium heat, combine the fresh cherries, sugar, and lemon juice. Cook while stirring occasionally until the cherries release their juices, approximately 5-7 minutes.
  • In a small bowl, create a slurry with the cornstarch and 1 tablespoon of cold water. Add this mixture to the cherry mixture and stir until it thickens, around 2 minutes. Remove from heat and allow it to cool completely.

Assembly

  • Once the cheesecake has chilled and set, spread the cooled cherry topping over the top of the cheesecake before serving. Garnish with additional pistachios if desired.

Notes

Ensure cream cheese and eggs are at room temperature for a smoother batter. Do not rush the cooling to prevent cracks. Use fresh cherries for the best flavor; if out of season, thaw frozen cherries before use.
