Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, and minced garlic.
  • Season with salt and pepper, then mix until well combined.
  • Form the mixture into meatballs about 1 1/2 inches in size and arrange them on a parchment-lined baking sheet.

Cooking the Meatballs

  • Bake the meatballs for 15-18 minutes or until golden brown and cooked through.

Making the Sauce

  • While the meatballs are baking, heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour in chicken broth and heavy cream, then add chopped sun-dried tomatoes and Italian seasoning.
  • Let the sauce simmer for 4-5 minutes until it thickens.
