Filling Ingredients

Instructions
 

Preparation of Dough

  • In a bowl, mix the all-purpose flour, salt, and baking powder together.
  • Gradually add the warm water and 2 tablespoons of olive oil, stirring continuously until a rough dough begins to form.
  • Once the dough holds together, knead it on a lightly floured surface for 5-7 minutes until smooth and elastic.
  • Cover the dough with a clean kitchen towel and let it rest for 30 minutes.

Preparation of Filling

  • In a bowl, combine crumbled feta, chopped mint, and lemon zest.

Assembling Flatbreads

  • Once the dough has rested, divide it into small balls (yielding about 6-8 flatbreads).
  • Roll each ball into a thin circle, about 6 inches in diameter.
  • Place a spoonful of the feta-mint mixture in the center.
  • Fold the dough over the filling, creating a half-moon shape, and pinch the edges to seal.

Cooking

  • Heat a skillet over medium-high heat and brush with olive oil.
  • Place the stuffed flatbreads in the skillet and cook for 2-3 minutes on each side until golden.
  • Remove from the skillet and garnish with fresh parsley. Serve warm.

Notes

To elevate the flavors, consider adding sun-dried tomatoes or olives to the filling. If the dough is too sticky, add flour bit by bit. You can grill the flatbreads for a smoky flavor.
