  • 1 tsp garlic powder Adds a rich aromatic touch.
  • 1/2 whole red onion, finely chopped Provides sweetness and depth.
  • 1 8.5-oz jar sun-dried tomatoes, drained and chopped Adds a burst of intense flavor.
  • 5 oz baby spinach Adds a lovely green color.
  • 6 oz feta cheese crumbles Elevates the dish’s creaminess and flavor.
  • 1/3 cup pesto sauce Optional for extra zing and herbaceous flavor.

Instructions
 

Preparation

  • Preheat the oven to 400 degrees Fahrenheit.
  • Place the salmon filet on a parchment-lined baking sheet.
  • Drizzle the salmon with avocado oil and coat it evenly.
  • Season the salmon with sea salt and garlic powder.

Cooking

  • Bake the salmon in the center of the oven for 10 minutes.
  • While the salmon bakes, heat a skillet over medium heat and add more avocado oil.
  • Add the chopped red onion and sauté until soft, about 5-8 minutes.
  • Introduce the sun-dried tomatoes and baby spinach, covering to allow spinach to wilt.
  • Mix in the feta cheese and heat until slightly melted.
  • Remove the salmon from the oven and spread the spinach mixture over the top.
  • Return to the oven for another 8-10 minutes, or until the salmon reaches 145 degrees Fahrenheit.
  • If using pesto, drizzle it over the salmon before serving.

Notes

For best results, use fresh salmon. Prepare spinach mixture ahead of time if short on time. Consider squeezing fresh lemon juice over the salmon just before serving. Experiment with vegetables like zucchini or bell peppers, and consider swapping feta for goat cheese or ricotta.
