Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and cook until softened, about 3-4 minutes.
  • Add the ground beef or chicken to the skillet and cook until browned, about 5-7 minutes.
  • Stir in the taco seasoning, black beans, diced tomatoes with green chilies, and corn. Allow to simmer for 5-7 minutes.

Assembly and Baking

  • In a greased baking dish, layer the beef mixture.
  • Add a layer of crushed tortilla chips.
  • Top with shredded cheddar and Monterey Jack cheeses.
  • Bake in the preheated oven for 15-20 minutes or until cheese is melted and bubbly.
  • Remove from the oven and drizzle with sour cream and sprinkle with chopped green onions.
