For the Chocolate Cake

  • 1 box chocolate cake mix a soft, tender base
  • 1/2 cup vegetable oil adds moisture and richness

For the Cheesecake Layer

  • 2 packages cream cheese, softened creamy and smooth
  • 1 cup granulated sugar for that perfect sweetness

  • 1 teaspoon vanilla extract aromatic and comforting
  • 1/4 teaspoon mint extract the star of the show, vibrant and fresh
  • 1/4 cup sour cream for subtle tanginess and moisture

For the Fudge Layer

  • 1 cup semi-sweet chocolate chips melting into rich, indulgent chocolate
  • 1/2 cup heavy cream to create a luscious fudge texture
  • 1/4 teaspoon vanilla extract for added warmth
  • Crushed mint chocolate candies or mint chocolate chips for garnish, adding crunch and zing
  • Fresh mint leaves optional, for a pop of color and freshness

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a 9-inch springform pan.
  • Prepare the chocolate cake mix according to the package instructions and pour the batter into the prepared pan.
  • Bake for 20-25 minutes or until a toothpick comes out clean. Let the cake cool completely.
  • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla, mint extract, and sour cream.
  • Pour the cheesecake batter over the cooled cake layer and bake for 35-40 minutes until set. Let it cool inside the oven with the door ajar for 1 hour.

Fudge Layer Preparation

  • Melt the chocolate chips and heavy cream together in a microwave-safe bowl, stirring every 30 seconds until smooth.
  • Stir in the vanilla extract and pour the fudge over the chilled cheesecake, spreading evenly.
  • Refrigerate for 30 minutes to set the fudge layer.

Serving

  • Garnish with crushed mint chocolate candies and fresh mint before slicing and serving.

Notes

Ensure your cream cheese is at room temperature for the best texture. Be patient with cooling times for the cheesecake layer!
