For the icing

  • 16 ounces confectioners' sugar For a sweet icing glaze.
  • 0.5 cup whole milk To blend into the icing.
  • 0.5 cup cocoa powder For an additional chocolate flavor.
  • 0.25 cup unsalted butter Melted for the icing.

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking pan by greasing it or lining it with parchment paper.
  • In a large bowl, cream the softened unsalted butter and granulated sugar together until light and fluffy.
  • Add the eggs one by one, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour and cocoa powder.
  • Gradually incorporate the dry mixture into the wet mixture, alternating with a splash of milk if needed.
  • Fold in the chopped pecans until evenly distributed.

Baking

  • Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.

Icing

  • In a saucepan, melt the unsalted butter over medium heat, then stir in the cocoa powder and milk until combined.
  • Gradually whisk in confectioners' sugar until smooth and glossy.
  • As soon as the cake comes out of the oven, sprinkle mini marshmallows on top and pour the warm icing over everything.

Serving

  • Allow the cake to cool for a few minutes, then slice and serve.

Notes

For best results, use room temperature ingredients and mix the batter gently to avoid overmixing. Leftovers can be stored at room temperature for up to three days.
